Strivin’ For Perfection

It all started with wanting to bring some sauce to Fort Wayne. Bravas Sauce specifically. If you have ever been to Spain there’s no way you left without eating some Patatas Bravas. They are everywhere and you should absolutely eat all of them. They’re so good.

Growing up, our family split the month of August between Barcelona and a little village in Galicia called Trabadelo. On our arrival to Barcelona it became pretty much a ritual to stop at the bar below Abuela’s apartment, La Garraffa, for a drink and of course, some Patatas Bravas. Little fried potatoes cubed up covered in a slightly spicy sauce. We used to long for those potatoes when we returned to the states. Somewhere between the ages of 12-14, I can’t really remember, our family would do our best to make Patatas Bravas here in Fort Wayne for dinner. Our dad grew up with the owner of La Garraffa, as it has been beneath my Abuelas apartment his whole life, and they very kindly gave us their recipe. I’ve tweaked it a bit to get it to taste like my favorite versions of the catalonian style Patatas Bravas.

In 2011, Bo thought Fort Wayne might be ready for some Bravas Sauce and opened up a hot dog cart to serve the people. We didn’t have access to a fryer that first year, however we made sure to adorn a lot of hot dogs with the sauce. We even top our signature dog, the Bravas Dog with potato sticks and bravas sauce showing respect to the dish that inspired the whole company.

In 2012 we opened our first Food Truck, which we still operate today, and hired on our first employees. We finally began serving up Patatas Bravas to Fort Wayne and that’s when things began to take off. We opened our first restaurant back in 2014 in the 07’ neighborhood, 3412 Fairfield Ave, where we consistently won awards for best burger in the city. We closed during the COVID-19 pandemic in July of 2020 to rethink our business model and have since reopened on the same block, but just two doors down at 3416 Fairfield Ave. 

The new spot has been open since April of 2023 and is described as “A weird, Spanish American restaurant.” It is an amalgamation of the Bravas journey, the people who have filtered in and out of our company, as well as our personal experience living here in the USA and Spain. We currently serve lunch, dinner and brunch on the weekends. There is a rather dope list of Spanish wines and we have a nice selection of craft beers on draft and in cans. The menu rotates and changes throughout the year as we have a desire to work with local farmers and the products that they grow. Our mission is to continue serving up delicious food and drink, contributing to our community in a positive way while growing the company as organically as possible.
